This release captures an early but remarkable chapter from Ballina Distillery (previously The Connacht Distillery) in the heart of Mayo, one of the most progressive distilleries shaping modern Irish whiskey.

Distilled using 100% Irish malted barley and crafted with an extensive 7-day fermentation process before being double distilled, this whiskey represents a true expression of modern Irish single malt distilling.

At 5 years old, this single cask offers a rare opportunity to experience the developing house character at a meaningful stage of maturation.

The Cask – Ex-Bourbon Cask No. 858

The defining feature of this release is its maturation in a single ex-bourbon cask (Cask No. 858), where the liquid has been laid down since 2021.

Matured in first-fill American oak, the cask imparts rich sweetness, vibrant tropical fruit, and a classic vanilla backbone that perfectly complements the double distilled malt spirit. 

In whiskey maturation, this translates to a beautifully rounded profile where bright distillery character and oak influence work in perfect harmony.

Tasting Profile:

Expect a whiskey that punches above its age:

• Nose: Bright tropical melon, crisp green apples, and sweet vanilla bean paste

• Palate: Full-bodied with bright sweet pear drops on the tongue, balancing butterscotch and digestive biscuit

• Finish: Long and warm, locking in lightly toasted walnuts and runny honey until the very last drop
