This release captures an early but remarkable chapter from Boann Distillery one of the most progressive new distilleries shaping modern Irish whiskey.

Distilled using a traditional single pot still mash bill (50% malted, 50% unmalted barley), this whiskey represents the revival of a quintessential Irish style, reinterpreted with precision and intent.

At just 5 years old, this is among the oldest liquid currently released from the distillery, offering a rare opportunity to experience the developing house character at a meaningful stage of maturation.

The Cask – Rejuvenated French Oak from Forêt de Tronçais

The defining feature of this release is its exceptional oak.

Sourced from the legendary Forêt de Tronçais, the cask is crafted from Quercus Petraea (European sessile oak) widely regarded as one of the finest coopering woods in the world, prized for its tight grain and elegant tannin structure.

This is not a standard cask.

Initially matured in a Premier Grand Cru Classé Bordeaux wine barrel (notably from estates such as Château Mouton Rothschild).

Then into a NEOC (New Era Oak Cask) aka Rejuvenated French Oak, made from Quercus Petraea and from Forêt de Tronçais. This cask was hand shaved stave by stave, reassembled and toasted for 90 minutes to the edge of carbonation with shaved and toasted heads added back.

The result delivers both the depth of prior wine influence and the vibrancy of newly activated oak.

Why Forêt de Tronçais Matters:

Forêt de Tronçais is one of France’s most historically significant oak forests, planted and managed since the 17th century for shipbuilding and later fine cooperage.

Its oak is known for:

  • Exceptionally tight grain → slower flavour extraction
  • Refined tannins → structure without harshness
  • Elegant spice profile → cocoa, coffee, and subtle sweetness

In whiskey maturation, this translates to balance, precision, and longevity rather than brute oak influence.

Expect a whiskey that punches above its age:

  • Nose: Cocoa, roasted coffee, honeycomb, and soft orchard fruit
  • Palate: Full-bodied with caramelised apples, dark chocolate, and warming spice
  • Finish: Lingering toasted oak, gentle tannins, and a dry, elegant close
