Redacted Whiskey 003 x Dick Macks: 11 Year Old Dingle Distillery Single Malt Sauternes Finish

We’ve been quiet online at Redacted Whiskey, but busy behind the scenes.

But trust us this one was worth the wait.

Redacted Whiskey 003 is here in collaboration with Dick Mack's Pub in Dingle!

We bring you an 11 Year Old Single Malt from Dingle Distillery, finished in a rich Sauternes cask. This single cask (#299) was Distilled in December 2013, first matured in an ex-bourbon barrel, and re-casked in May 2021 into a Sauternes cask, this whiskey captures over a decade of patience and craft.

It was distilled in the Gaeltacht, created exclusively for the legendary Dick Mack’s Pub, and proudly labelled in full Dingle Gaeilge.

The result is something special: aromas of honeysuckle, apricot, caramel, and vanilla. On the palate, rich malt, candied citrus, and white peach unfold in layers, finishing with almond, honey, and gentle warmth and medium long finish. 

The artwork, by Cork-based artist Silvio Severino, captures Dingle’s otherworldly feeling. He captures that magical sense of stepping into a place where time slows, stories grow taller, and great whiskey flows.

Special thanks to Peter White, who purchased this cask long ago and sourced the Sauternes finish that made this release possible.
